Summer Berries Muffins

100gr sugar
200gr flour
2 teaspoons baking powder
grind of 1 orange
1 youghurt
2 tablespoons milk
1 egg
2 tablespoons oil
150gr assorted berries

Preheat the oven (180ºC).
Mix sugar with the flour and the baking powder.
Add the orange grind, youghurt, milk, egg and oil. Mix vigourously.
Gently fold in the berries and pour into paper cups or buttered muffin tins.

Blackberry Muffins


500 gr flour
2 tsp baking powder
1/4 tsp salt
125 gr softened butter
2, dl sugar
2 eggs
1,5dl milk
200gr blackberries


In bowl, mix the flour with the baking powder and the salt.

In separate bowl, cream butter with sugar; beat in eggs one at a time. Gradually stir in the milk

Make a well in centre of dry ingredients; pour in the liquid mixture and stir just until moistened. Gently fold in the blackberries.

Spoon into large paper-lined or well-greased muffin cups, filling to top. Bake in 190°C oven for 25 to 30 minutes or until tops are firm to the touch.

Yoghurt Cake

1 yoghurt (keep the cup to measure the other ingredients)

3 cups sugar
3 cups flour
3 cups of milk
3 eggs
orange rind
powdered sugar (optional)

1. Mix everything with an electric beater.

2. Pour the mixture into a greased floured tin.

3. Goes into the oven until golden and fluffy (check with a toothpick).

4. When cool, you can sprinkle it with powdered sugar.

Chocolate Cake


200 gr flour

200 gr sugar

100 gr softened butter

200 gr chocolate bar

1 dl milk

3 eggs

1 teaspoon baking powder


Beat egg whites at a high speed until stiff peaks form. Set aside.

Melt the chocolate over a bain-marie and set half of it aside, for frosting.

Beat the butter with the sugar, add the egg yolks, milk, melted chocolate, flour and baking powder until light and fluffy. Gently fold in the egg whites.

Bake in medium heat oven for approximately 40 minutes or until a toothpick inserted near centre comes out clean.

When cool spread the remaining chocolate as a frosting.

Orange Cake


150 gr of yellow sugar
50 gr of margarine
200 gr of flour
1 teaspoon of baking powder
5 eggs
2 oranges and lemon rind
1 cup of milk


Beat the sugar with the margarine. Add the yolks of the eggs, the flour and the baking powder. Mix it all very well. Gradually add milk. Then, put the orange juice, and the rind of the oranges and lemon. Beat the egg whites and wrap everything gently. Bake at 180ºC.

Chocolate Muffins

200 gr of baking chocolate
200 gr flour
125 gr yellow sugar
2 eggs
75 gr softened butter
9 table spoons of milk
3 table spoons of powdered cocoa
1 teaspoon of baking powder
some extra butter for the tins

Pre-heat the oven to 180ºC and butter 12 small muffin tins.
From the packet of chocolate take 12 little squares and set them aside. Break up the rest of the chocolate uneavenly. Beat the butter with the sugar until a creamy texture in a bowl. Beat the eggs with the milk; mix the flour with the baking powder and the cocoa. Add the mixture of milk and eggs to the butter; add the flour mixture and beat well. Add the chopped chocolate and mix.
Fill in the 12 tins with the mixture and place a chocolate square in them. Bake for 20 minutes.
