Blackberry Muffins


Ingredients


500 gr flour
2 tsp baking powder
1/4 tsp salt
125 gr softened butter
2, dl sugar
2 eggs
1,5dl milk
200gr blackberries



Preparation:

In bowl, mix the flour with the baking powder and the salt.

In separate bowl, cream butter with sugar; beat in eggs one at a time. Gradually stir in the milk

Make a well in centre of dry ingredients; pour in the liquid mixture and stir just until moistened. Gently fold in the blackberries.

Spoon into large paper-lined or well-greased muffin cups, filling to top. Bake in 190°C oven for 25 to 30 minutes or until tops are firm to the touch.
